Its aromatic roots are smaller and more pungent than ginger and grow well in moist, fertile soil in the ground or in pots. The roots can be used fresh or dried as a culinary spice.\u003c\/p\u003e\n\u003cp\u003eThis is the lesser variety of galangal (Alpinia officinarum), which originates from China and is popular across Asia and Eastern Europe. Compared with greater galangal, its rhizomes are smaller with a sharper, more peppery flavour.\u003c\/p\u003e\n\u003cp\u003eGalangal is a sweet, aromatic spice. It pairs beautifully with chilli, garlic, ginger, lime and coriander in curries, and also works well in jellies and herbal teas. Added to Asian sauces and pastes, it brings a depth of flavour that is hard to match. It is usually grated, or dried and ground, and can be added at any stage of cooking to control the depth and intensity of its flavour.\u003c\/p\u003e\n\u003cp\u003ePlant galangal in warm soil during September or October. Set the rhizomes 5-7 cm deep, spacing plants about 30-45 cm apart. In cooler regions of Australia it can be grown in a glasshouse. Divide clumps and replant fresh pieces every 3 to 4 years. Harvest the rhizomes 9 to 10 months after planting, once the lower leaves turn yellow or the stems dry and fall over.
