Choy Sum is one of the most loved vegetables in Asian cuisine and is now also widely used in the western world. The flavour of Choy Sum can be described as midway between spinach and cabbage. It remains milder in younger leaves and develops a little ‘kick’ when leaves get older. Direct-seed choy sum into well-tilled garden beds that have been amended with a 4-6cm layer of compost, in early spring or late summer. Water the choy sum patch at least once a week to ensure that the soil remains moist.
